In Pantescan dialect, "Firri Firri" is the hoe used to make holes (concas) that protect the vines from the wind.
The Catarratto and Pignatello come mainly from two plots where they grow together, but also from all the various plants grown under the walls of the terraces.
The blend is 85% Catarratto, 10% Pignatello and 5% Inzolia.
The white and red grapes are harvested at the end of September and destemmed by hand using a net. They macerate together for four to six days. The wine ferments and ages in fiberglass. 20mg/l of S02 is added at bottling, which takes place in the spring on a waning moon.
