In the difficult 2021 vintage some parcels of fruit were sparkling-wine-ripe but not top-shelf-Burgundy ripe. Le Grappin and Jon Purcell of Vin Noé decided to embark on a traditional method sparkling project, aiming to make a high quality, vinous, sparkling wine with real complexity in as natural method as possible. The label follows Vin Noé’s lino-cut style, but the anchor is a “grappin”!
The vin clair, is 50% Bourgogne Aligoté from Le Grappin’s Mâcon-La Roche Vineuse (organically farmed, not certified) and Vin Noé’s direct-press organic Pinot Noir from Mercurey. The two halves were blended in Spring 2022 once dry and malolactic conversion was complete and was elaborated by one of Burgundy’s best crémant houses. The prise de mousse was done with a cultured house yeast and a house liqour, rather than with industrial yeast and grape concentrate (as is the method used in the vast majority of traditional method sparkling wines). The wine spent 18 months on its lies from the secondary fermentation in bottle before being disgorged with no sulphites or dosage (ie no added sugar at disgorgement). Then more than a year in bottle post disgorgement to ensure finesse of bubbles.
