In the Saint Aubin appellation of Burgundy, the grapes for this Chardonnay grow in clay soils atop 40 centimeters of active limestone. The vines are only ever worked by hand or horse, and the grapes are then direct press and foot-crushed. The distinct terroir and straightforward practices give way to a wine with perfectly balanced tension and precision. Surprising acid cuts through slight buttery notes, and the additional aging is the cherry on top of this spectacular wine!

Soil/Terroir: From a 0.4ha northeast facing parcel in Saint-Aubin. Shallow, heavy clay soils on active limestone (around 40cm deep).
Average Vine Age: 22 years, planted by Jean-Jacques Morel.
Farming Practices: Certified organic, only worked by hand or horse.
Vinification: direct press, foot-crushed, then straight into barrel.
Aging: aged in a single 500L barrel for 8 months.
