Pear, flint and yeast with honey and lemon flavors. Crisp leesey and long finish.
Grapes were crushed and destemmed into a one ton bin to macerate for 48 hours before pressing. Settled juice was moved to stainless steel where fermentation, including full malolactic, continued over about twelve months. In August of 2023 the wine was racked and bottled by hand without fining or filtration after twenty-two months on its lees.
This is a classic expression of these grapes which come thirtyplus year-old, clone 4 chardonnay vines. They came trough the difficult and wet 2021 harvest in great shape and delivered a beautiful, round yet crisp wine.
