This Pinot Noir is pressed using Marc’s unique whole cluster sandwich method: 2/3 whole cluster grapes are sandwiched around 1/3 of destemmed grapes in the tank to undergo fermentation. The wine is then aged for 10-12 months in used barrels. The resulting wine has a nice balance of structure and freshness - with black pepper and bright purple fruit.
