Nibiô is local dialect for this unique strain of Dolcetto characterized by its red stems. It used to be the primary grape of the area but was largely wiped out by phylloxera. This cuvée is a selection of said grapes planted throughout the estate.
Starting in 2018, a significant proportion of the grapes destined for this cuvée are now being used in a new wine called "Le Mat du Raisin". An average annual production, once around 6500 bottles, has now been reduced to around 4000 bottles.
Four weeks of maceration on the skins with two remontages a day. After a racking, aged on the lees 25 and 50hl botti for 24 months.
