Foot-crushed, maceration 8 days. Never soutiré.The cool (climate) little sister of Le Mazel’s “Paulou 2024”

Tight and (rasp)berry-bright. Dusty spices and the Cinsault florality but in a “red” way (plums? Currents) — not “the aqueux” way (which tastes pink). Nervy, snappy, fresh with mineral finish. A tongue dancer: just saying it as it is!

Colour: Rubies in the sun i.e. red but not red-red.

Name: From the earliest (Roman era) versions of the Sator Square and a hi to Jérôme Saurigny.
