"90% Macabeu + 10% white Carignan 2021 was dry, but with a cool summer, so there was no hydric stress. The vines went deep in the soil to find water & minerals which give a profile of jus de cailloux "rock juice". Fermentation went off without a hitch & the wine constructed itself well from the beginning. The wine is vertical and has a nice salinity. 80 year old vines, planted on gneiss. 24 months in casks, no sulfur added, bottled before harvest 2023."
