Description
100% Carignan Whole-cluster maceration in concrete for two days, then pressed in the middle of fermentation into stainless steel vats and finally racked twice in order to remove gross & fine lees. After 3 months the dry wine goes into demi-muid to complete aging for two winters. This was a dry vintage without any heatwaves so the Carignan reacted very well. -Camille Rivière Selections
