Since La Caillère lies within the original Clos du Tue-Boeuf (which is in fact a clos), the estate name features prominently at the top of the label along with the estate's emblem of a cow with wings. This is how the Puzelat visually distinguish their historic land in Cheverny.
Whole-cluster, open-top, semi-carbonic fermentation in vat. Pressed, aged for eight months in used Burgundy barrels and 400-liter demi-muids, and bottled unfiltered.
With all estate wines at Tue-Boeuf, the decision to add or avoid S02 is made instincively each vintage. If S02 is added, it is only at bottling and in a tiny dose of one gram per hectoliter.
