A collaboration bottling between our friend at Babysips on Rivington and La Rural winery. 100% Sumoll coming from a single parcel of 10 year old vines in Santes Crues, Catalunya. Fermented on the skins for a day and a half, aged for 1 year in 500L Catalan chestnut barrels, then 1 year in bottle.
